Passionate Professional Chef with 32 years of experience in handling and preparing food. Specializing in Mexican cuisine and from around the world. Touring various countries and states of the republic to create new recipes.
My interest in cooking begins, working in different places where I begin to fall in love with the profession of cook.
Started working at Grupo Orraca in 1998 and acquired experience in numerous cities and restaurants like “Drago” in LA, Vino E Cucina in Toluca, Mex, and Puebla, Mex. Traveling to Veracruz, Mex to work as executive Chef of “La Mera Madre” by Villa Rica. Developing the Food menu and taking charge of the kitchen management at “XamanEk” in Madrid.
And joining back Grupo Orraca in 2008 where he developed numerous concepts as Executive Chef and partner of the restauranteur Group such as Hacienda San Martín, Las Verdes Matas, NorteSur, Salsita Pal Taco, Taller D Tacos and 4 different locations of Fonda Yecapixtla.

The food is not your usual TexMex. Food is very authentic Mexican. It is 100% delicious. My wife had the mole enchiladas and said they were incredible. Mole was on point. I had the pork belly nachos. Best I had ever had. The pork belly had a great flavor. The star is the green sauce they bring with the chips!
Delicious food, and very friendly service. Tailored to the PEARL patrons. They are a mezcal bar, and there is not much variety of other spirits. Will definitely regularly frequent.
I was looking for an authentic Mexican food for many years I finally found it at Santa Diabla. Their food is excellent, good quality with real Mexican flavors from the center and south of Mexico. You need to try it.
This is an excellent restaurant that features delicious food from Mexico and executes the dishes of that area to perfection. If you seek food from Mexico that is crafted by truly caring people, this restaurant is for you. Rodrigo our server was fantastic and the atmosphere is very pleasant.
